- 1 lb Ground Breakfast Sausage
- ¼ cup Flour
- 2 cups Milk
- ½ tsp Salt
- ¼ tsp Black Pepper
- 6 English Muffins
- 8 Eggs
- 6 slices Cheddar Cheese
- 5 oz Mixed Greens
- ½ cup Salad Dressing
Heat a skillet or cast iron skillet over medium-high and add the sausage
When fully cooked, use a slotted spoon and set aside, removing all but about a 1/4 cup of the fat from the skillet
Turn the heat to medium and add flour to the skillet, cooking and stirring for 5 to 10 minutes or until the mixture starts to turn golden
Slowly add the milk, salt and pepper and stir constantly, cooking the gravy until it boils and thickens
Meanwhile, lightly toast the English muffins
In a separate skillet, scramble the eggs
Turn the broiler to high and line a baking sheet
Add the English muffins onto the baking sheet and spread the gravy on the open-faced muffins
Top with the cheese, scrambled eggs and the sausage
Broil until the cheese is bubbly and melted
Serve with side of salad and enjoy!
