English Muffin Breakfast Pizza

Ingredients
- 1 lb Ground Breakfast Sausage
- ¼ cup Flour
- 2 cups Milk
- ½ tsp Salt
- ¼ tsp Black Pepper
- 6 English Muffins
- 8 Eggs
- 6 slices Cheddar Cheese
- 5 oz Mixed Greens
- ½ cup Salad Dressing
Instructions
- Heat a skillet or cast iron skillet over medium-high and add the sausage
- When fully cooked, use a slotted spoon and set aside, removing all but about a 1/4 cup of the fat from the skillet
- Turn the heat to medium and add flour to the skillet, cooking and stirring for 5 to 10 minutes or until the mixture starts to turn golden
- Slowly add the milk, salt and pepper and stir constantly, cooking the gravy until it boils and thickens
- Meanwhile, lightly toast the English muffins
- In a separate skillet, scramble the eggs
- Turn the broiler to high and line a baking sheet
- Add the English muffins onto the baking sheet and spread the gravy on the open-faced muffins
- Top with the cheese, scrambled eggs and the sausage
- Broil until the cheese is bubbly and melted
- Serve with side of salad and enjoy!
