Ingredients

  • 1 lb Ground Breakfast Sausage
  • ¼ cup Flour
  • 2 cups Milk
  • ½ tsp Salt
  • ¼ tsp Black Pepper
  • 6 English Muffins
  • 8 Eggs
  • 6 slices Cheddar Cheese
  • 5 oz Mixed Greens
  • ½ cup Salad Dressing

Instructions

  • Heat a skillet or cast iron skillet over medium-high and add the sausage
  • When fully cooked, use a slotted spoon and set aside, removing all but about a 1/4 cup of the fat from the skillet
  • Turn the heat to medium and add flour to the skillet, cooking and stirring for 5 to 10 minutes or until the mixture starts to turn golden
  • Slowly add the milk, salt and pepper and stir constantly, cooking the gravy until it boils and thickens
  • Meanwhile, lightly toast the English muffins
  • In a separate skillet, scramble the eggs
  • Turn the broiler to high and line a baking sheet
  • Add the English muffins onto the baking sheet and spread the gravy on the open-faced muffins
  • Top with the cheese, scrambled eggs and the sausage
  • Broil until the cheese is bubbly and melted
  • Serve with side of salad and enjoy!
